I have a '99 SHO with about the same HU/HVAC situation.
New HU's are just plain difficult to do. A couple small-time entrepreneuers have tried to mass produce an install kit but at the end of the day nobody got it done.
The most common solution is to remote mount one. Some people use the console, others remove the ash tray and install one there.
You can go to v8sho.com for some info on the situation - obviously you don't have the v8, but the sound system is basically the same. I think there's a how-to on remote HU installation.
Personally, I left the stock HU - it's not a bad unit, and if you have any electrical skill all there is a hard-wire mod to turn the tape player into an aux input so you can connect your phone/mp3 player. It's a much higher quality connection than an FM transmitter or tape adapter.
I used a line output converter to get rca inputs for my amps. All 4 channels are conveniently located in the trunk on the left side behind the cardboard/carpet paneling.
I haven't installed my component speakers or amp yet, but my sub/amp is working well and full-range part of the mach system holds its own even with a 1000w rms amp and sub.
